Recipe Ingredients for Red Bell Pepper Hummus

16 oz of chickpeas (soaked overnight, boiled for 30 minutes, soaked for 1 hour)
1/2 cup water (from soaked chickpeas)
1 (roasted) red bell pepper
1 1/2 tablespoons tahini
1 teaspoons fresh lemon juice
2 tablespoons extra virgin olive oil
2 tbsp minced garlic
1 teaspoon salt
3/4 c water

Recipe Directions for Red Bell Pepper Hummus

  1. Wash and dry red bell pepper. Chop into inch pieces.

  2. In a blender or food processor, blend the chickpeas. Add red bell pepper, olive oil, tahini, lemon juice, garlic, cumin, water, and salt until the ingredients form a creamy, paste-like consistency. Serve immediately or cover and refrigerate for 30 minutes.
