This was the ultimate leftovers meal when I made it. I had intended to make a different dish but realized I was missing a key ingredient so had to come up with a new dinner on the fly, and this is what happened. I'd made beans last week in the crockpot and had some left over that I knew I had to use, as well as a few cups of cooked rice I'd made extra from a stir fry a few days ago, and two hot dogs that had been sitting in there quite lonely for awhile. So I tossed it all together and improvised some spices and...well...here you go. Incidentally, I *don't* like beans but I'm forcing myself to give them a chance due to all their obvious benefits. And with that in mind...this was actually pretty good. It would be even better with some kielbasa instead of the hot dog.

Recipe Ingredients for Red Beans & Rice (sort of)

1 1/2 cups pinto beans, cooked
1/2 onion, chopped
1 clove garlic, minced
2 ounces bacon
3 ounces kielbasa, sliced into rounds
1 dash cayenne
1 dash cumin
1 dash pepper
1 dash seasoned salt
1 dash paprika
2 cups rice, cooked

Recipe Directions for Red Beans & Rice (sort of)

  1. In a deep skillet, fry both strips of bacon until cooked but still fairly soft. Remove from heat and drain on a paper towel.

  2. Add onions and garlic to the bacon fat and sautee until onions are just beginning to brown.

  3. Chop hot dogs or kielbasa and add to onions.

  4. Add beans with some of their liquid, and spices to taste. Or, if you prefer, use pre-made cajun spice mix.

  5. Reduce heat and simmer together beans and other ingredients for 20-30 minutes or until some of the beans burst and mixture has a creaminess to it.

  6. Serve over plain rice with cornbread or biscuits on the side.
