Red beans and rice with a bit of chicken for an extra pop.

Recipe Ingredients for Red Beans and Rice

2 cups Red Beans
2 cup Rice, Brown, Long-grain, Cooked
1/2 cup Onions
1/2 cup pieces Mushrooms
1 1/2 medium Tomatoes

Recipe Directions for Red Beans and Rice

  1. Prepare the rice and beans as directed on the packages.

  2. Peel and dice the tomato. The tomato has to be peeled to avoid an akward texture in the rice. How to peel the tomato: bring a pot of water to a simmer. Drop the tomato in for 10 to 15 seconds. Remove and drop into a bowl of ice water. The skin should split and rub right off.

  3. Peel and dice the onion to the desired size. It doesn't matter what size it is, as long as it is the size that you like to eat.

  4. Wash and dice the mushrooms to the desired size.

  5. Chop the chicken into small pieces. Salt and pepper them. Frie them in a pan.

  6. Combine the onions and mushrooms with the chicken.

  7. Add the tomatoes to the chicken mix when the chicken is cooked on the outside.. Continue cooking untill the onions are fully cooked.

  8. Combine rice, beans, and chicken mix.

  9. Server hot. Salt and pepper to taste.

  10. Serving size: about 1 cup. Serves: about 10.
