Healthy version of traditional red beans & rice. Zatarain's seasoning mix is not included in nutrition facts. Add 5 grams of mix (15 cal.) per serving to food log to account for this.

Recipe Ingredients for Red Beans & Rice

16 oz red beans, dried, small
14 oz turkey sausage, smoked, chopped into 1/2 inch pieces
1/8 cup olive oil, extra virgin
1 large onion, chopped
1 large green bell pepper, chopped
2 tbsp garlic, minced
2 stalks celery, chopped
6 cups water

Recipe Directions for Red Beans & Rice

  1. Rinse beans, and then soak in a large pot of water overnight.

  2. In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.

  3. Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with 40 grams of Zatarain's New Orleans Style Red Bean Seasoning Mix. Add turkey sausage and bring to a boil. Reduce heat and simmer on medium-low for 2-3 hours, or until beans are done.

  4. Serve beans over steamed brown rice.
