Recipe Ingredients for Red Beans and Rice

1/2 cup brown rice
1/8 cup kidney beans
1 cup tomatoes, diced
1/2 cup zucchini
1/2 cup yellow squash
1/2 cup peppers, chopped
1 tbsp jalapeno pepper
2 cloves garlic
1 tbsp cheddar cheese, grated

Recipe Directions for Red Beans and Rice

  1. Cook rice according to package instructions

  2. saute garlic, peppers and squash in Pam

  3. add tomatoes, let simmer

  4. serve over rice with cheese sprinkled on top
