Recipe Ingredients for Red Beans & Rice

2 1/2 cups water
1 cup long grain white rice
1 tsp. salt
2 T. olive oil
1/2 cup onion, chopped
1/4 cup bell pepper, chopped
1/2 cup celery, chopped
1 tsp. minced garlic
32 ounce red beans, undrained
12 ounce crushed tomatoes
1 tsp. cajun seasoning

Recipe Directions for Red Beans & Rice

  1. In a saucepan combine water, rice & salt. Bring to boiling over medium-high heat. Turn heat to low. Cook & simmer 20 minutes.

  2. Meanwhile, preheat oil in a large skillet. Saute onion, celery, bell pepper, and garlic in hot oil until tender. Stir in undrained beans, undrained tomatoes, & creole seasoning (aka TONY'S!!). Simmer, uncovered, for 15 minutes.

  3. Serve bean mixture over rice.
