Heather's homemade Red Beans & Rice

Recipe Ingredients for Red Beans & Rice

1 pound dried red beans
8 cups water
8 ounce tomato sauce
2 teaspoons garlic salt
1/4 teaspoon Tabasco sauce
1 teaspoon Worcestershire sauce
1 lb turkey sausage
1/2 cup celery, chopped
1 cup onion, chopped
3 cloves garlic
1 salt and pepper to taste
2 cups Brown Rice (cook after beans)

Recipe Directions for Red Beans & Rice

  1. Sort through beans and soak overnight. Wash beans after soaking.

  2. Place the ham bone, water, tomato sauce, garlic salt, Tabasco sauce, Worcestershire

  3. sauce, and beans in a large pot. Cook, uncovered, over low heat.

  4. In a skillet, sauté the sausage until the grease is rendered. Transfer the sausage to the

  5. bean pot. Add the onion and garlic to the grease in the skillet; sauté until soft.

  6. Pour this mixture into the bean pot.

  7. Add the bay leaves, salt, and pepper and continue cooking for approximately 3 hours or until

  8. the beans are soft and creamy. Keep an eye on it while it cooks, and add more water if necessary.

  9. Remove the ham hock and the bay leaves. Skim off the excess water with a ladle (there may

  10. be up to 4 cups extra!). Using your ladle, squish a some of the beans against the side of the pot

  11. to thicken the base. Simmer while the rice cooks.

  12. Serve over rice.
