Recipe Ingredients for Red beans and rice

3 cups kidney beans (2 15oz cans), drained and rinsed
28 oz can diced tomatoes
1 tsp chicken bouillon
1 large onion, chopped
1/2 tsp olive oil
12 tsp McCormick?s Bold Taco Seasoning (1 packet)

Recipe Directions for Red beans and rice

  1. Combine one can of kidney beans, the juice from the can of tomatoes (reserve actual tomatoes) and 1 tsp of bouillon. Stir, bring to a boil, and simmer for 10-15 min. til beans are mushy. When ready, mash with a fork or blend with immersion blender.

  2. Meanwhile, saute onion in olive oil.

  3. Combine tomatoes, onion, taco seasoning, mashed beans, and other can of kidney beans. Stir, bring to a boil and simmer for a few minutes.

  4. Serve over rice.
