My version adapted from Meatless Dishes in Twenty Minutes by Karen A. Levin

Recipe Ingredients for Red Beans and Rice

2 cups water
1 cup brown rice
1 tbsp butter
2 tbsp olive oil
1/4 onion
1/2 red bell pepper
1 tsp garlic, minced
14 1/2 ounce stewed tomatoes
16 ounce red beans, drained
1 tsp thyme
3/4 tsp hot sauce

Recipe Directions for Red Beans and Rice

  1. Combine water (can use broth for better flavor), rice and butter in small saucepan. Cover and bring to a boil over high heat. Reduce heat to low and simmer for 40-50 minutes or until liquid is absorbed.

  2. While rice is cooking, heat oil in a 10 inch skillet over medium-high heat.

  3. Coarsely chop onion and place in skillet. Coarsely chop bell pepper and add to skillet with garlic. Cook for 3 minutes, stirring occasionally.

  4. Stir in tomatoes, beans, thyme, and hot sauce. Simmer uncovered for 8-9 minutes, stirring occasionally.

  5. Serve over rice, with parsley and hot sauce as garnishes if desired.
