My mother in-law's classic southern red beans and rice.

Recipe Ingredients for Red Beans & Rice (minus the rice)

16 oz dry red kidney beans
16 oz kielbasa
1 onion
4 cloves garlic
1 cup white wine
1 cup water

Recipe Directions for Red Beans & Rice (minus the rice)

  1. Add beans, diced onion, minced garlic, white wine, and water to crock pot.

  2. Cover and let sit overnight - don't turn the crock pot on yet.

  3. The next morning...slice sausage into bite size pieces.

  4. Add sausage to crock pot.

  5. Add water to cover.

  6. Cook on Low for 8-10 hours.

  7. Serve over white rice, hot pepper vinegar, and hot sauce if desired (not included in nutritional).
