Recipe Ingredients for Red Beans and Rice, Greek New Year's Eve Style

2 c brown rice
1 T olive oil
1 med red bell pepper, chopped
6 c spinach, stemmed
6 oz feta cheese, oil marinated
1/2 c chopped black olives
15 oz red kidney beans, drained

Recipe Directions for Red Beans and Rice, Greek New Year's Eve Style

  1. Cook rice and rice blend as directed. Keep warm.

  2. Saute red pepper in olive oil. Add spinach to wilt.

  3. Add beans, heat through.

  4. Mix together rice and rice blend.

  5. Spoon rice into a ring on large platter. Fill with spinach bean mixture. Top with feta cheese.
