Recipe Ingredients for Red Beans and Rice Chicken Crock Pot Dinner

3 breasts chicken
3 cups kidney beans
3 cups corn
1 cup salsa
2 cups canned tomato
1 tsp cumin
1 tsp chili powder
2 cups brown rice

Recipe Directions for Red Beans and Rice Chicken Crock Pot Dinner

  1. Rinse and place chicken breasts in crock pot.

  2. Sprinkle cumin and chili powder over.

  3. Drain corn and pour over chicken.

  4. Drain and rinse beans, place over rice.

  5. Add can of tomatoes, and salsa.

  6. Cook on low 6-8 hours or high 3-4 depending on crock pot. Serve over rice, garnish with cheese or sour cream if desired.
