Red Beans and Rice minus the rice

Recipe Ingredients for Red Beans

16 oz Beans, Kidney, Red, Mature Seeds
2 tbsp Olive Oil
1 cup Onions
0.5 cup chopped Green Bell Pepper
2 stalks Celery
1 tsp Salt, Table
0.5 tsp Pepper, Red Or Cayenne
0.25 tsp Pepper, Black
1 Teaspoon Thyme
16 oz Ham, Sliced, Regular
14 oz Smoked Link Sausage, Pork
3 tbsp Minced Garlic

Recipe Directions for Red Beans

sautee onion, bell pepper & celery. add spices ham and sausage sauteeing for 5 min. Add garlic and beans w/ enough water to cover the mixture. Simmer uncovered for 2 hours. Mash half of mixture against the side of the pot and simmer for another 1 1/2 hrs. Serve over rice
