add sausage after cooking and top with brown rice. I drop in a jalapeno and top with green onions and a little low fat cheddar cheese.

Recipe Ingredients for Red beans

1 lb dry red beans
411 grams (1 can no salt) diced tomatoes
10 cups water
1 cup onion, chopped
2 cloves garlic, minced
7 ounce ham shank, visible fat removed

Recipe Directions for Red beans

  1. soak beans overnight

  2. boil all ingredients for a few hours and let simmer until thickened.

  3. season to taste
