One pound of white navy, pinto, black, or lima beans, or blackeyed peas may be substituted for the red kidney beans; cooking times may vary for other beans. Low sodium, fat free, chicken broth may be substituted for water.

Recipe Ingredients for Red Beans

1 lb red kidney beans
1 lb ham steak, chopped
1 large onion, chopped
5 cloves garlic, chopped
1/2 c chopped green onions
1/4 c chopped celery
1 tbsp chopped parsley
10 c water

Recipe Directions for Red Beans

  1. Sort and wash beans; set aside.

  2. Bring water to rolling boil in a large pot or dutch oven.

  3. Add all seasonings, return to boil.

  4. Add beans and boil for 30 minutes. Do not cover.

  5. After 30 minutes of boiling, cover pot and lower heat so beans can simmer for one hour.

  6. Add chopped ham steak, return cover and continue to simmer for another 30-40 minutes or until desired consistency is reached.

  7. Serve over hot brown or white rice, with cornbread/muffins.
