My personal version of red bean paste used in buns or glutinous rice dumplings.

Recipe Ingredients for Red bean paste

142 1/2 ml red ("azuki") beans
60 ml sugar, adjust to personal preference

Recipe Directions for Red bean paste

  1. Uk measurements are 0.5 cup red beans and 4 tablespoons sugar. Serving sizes really depend on what you use the paste for!

  2. Soak the beans in water for about 24 hours.

  3. Drain the beans and place them in a pot of water.

  4. Heat the water till it boils. Keep it at boiling temperature for 1 minute then turn off the heat.

  5. Repeat steps 3-4.

  6. Drain the beans, add the sugar, then fill the pot till it covers the beans by about 2cm. Boil at medium-high heat till the beans are falling apart - this takes about slightly over 2 hours. Be careful not to let all the water boil away - the beans will charr!

  7. Let the paste cool and store it in a small closed microwavable container in the fridge for about a week maximum.
