Red Bean Gumbo made with Blue Runner Beans

Recipe Ingredients for Red Bean Gumbo

1/2 cup flour
1/2 cup green pepper, chopped
2 cloves garlic, minced
1 cup onion, chopped
1 lb smoked sausage, sliced
7 serving Blue Runner Red Beans, No Added Salt

Recipe Directions for Red Bean Gumbo

In a large saucepan, add flourand make a medium brown roux. Stir in the green bell pepper, garlic, and onions. Saute until onions are clear; add the smoked sausage. In the bowl of a food processor, add two cans of Blue Runner red beans; process until pureed. Add the beans to the roux along with 8 cups of water. Stir until thoroughly blended. Return to a boil without stirring, then simmer on low heat for an additional 30 minutes. Yields12 one cup servings. (Optional: Bring the mixture to a boil; lower the het and crack the eggs into the hot mixture, one egg at a time. (Eggs will poach).)
