"An American version of classic French Bread." I found this recipe on the back of red star's quick rise yeast packet and have updated the directions per my known of making bread. This recipe doesn't make mind blowing bread, but it is pretty easy once you get a handle on making bread.

3 cups All-purpose flour
1/4 oz Active Dry Yeast
1 tsp salt
1 cups water

Recipe Directions for Recipe #9 French Bread: Traditional Metod from Carol's collectiob

  1. Add one package of yeast (quick rising) to 1/4 cups of slightly boiling water. Let sit for 8 to 10 minutes, until water/yeast mixture starts to bubble.

  2. In medium mixing bowl, combine 1 1/2 cups of flour and salt. Mix for about a minute.

  3. Add yeast mixture to flour mixture and mix still flour in moistened.

  4. Add the reminding water to flour mixture and mix until it looks like lumpy oatmeal.

  5. Slowly add reminding flour, while mixing until the dough mixture comes together in a ball.

  6. On a lightly floured surface, knead dough until it is smooth and elastic, about 5 to 8 minutes.

  7. Place in greased, metal ball and cover with towel for 40 minutes to 1 1/2 hour or until dough doubles in size.

  8. Punch down 8 to 10 times.

  9. On a lightly floured surface, roll or pat dough to a 12" x 6" rectangle.

  10. Start with longer side, roll up tightly, pressing dough into roll with each turn.

  11. Pinch edges and ends to seal.

  12. Place back in greased, metal ball and (optional) sprinkle with cornmeal. Clover with towel for 40 minutes to 1 1/2 hour, until indentation remains when lightly touched.

  13. With very sharp knife, make 2 to 3 diagonal slashes across the top of the loaf.

  14. Spray or brush loaf with cold water several times in the first 15 minutes and place in bake at 425 degrees F. for 25 to 30 minutes.

  15. Remove from pan and allow to cool.
