Taken from the Diabetic Cookbook and changed to accommodate my allergies to sugar and white flour

Recipe Ingredients for Really Good Fruit Flan

1/2 c whole wheat flour
1/3 c oatmeal, quick cooking
1/8 tsp baking soda
1/2 c cornmeal
1 tsp baking powder
1/8 tsp cinnamon
1/2 c yogurt, nonfat, unsweetened
1/4 c egg beaters
1/8 c honey
2 tbsp melted butter
8 oz fruit cocktail, water packed, drained
2 tbsp honey, liquid, warm
2 tbsp chopped pecans

Recipe Directions for Really Good Fruit Flan

  1. Mix the 1st 6 ingredients in a medium bowl. Mix the next 4 ingredients in a small bowl. Add to the dry ingredients and mix until moist. Press into an ungreased 9-inch pie plate or flan pan.

  2. Top with fruit cocktail and pecans. Press gently into batter. Glaze with honey.

  3. Bake at 350 for 25 minutes
