A rustic and healthy potato kale soup with mushrooms, bacon, and parmesan cheese.

Recipe Ingredients for The REAL Potato Kale Soup

2 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
4 cup, chopped Kale
1 tbsp Olive Oil
2 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
8 mushroom Mushrooms
2 medium Onions
8 clove Garlic
6 tbsp Parmesan, Grated Cheese
1 tsp Salt, Table
6 serving Kitchen Basics Chicken Stock - Unsalted - 1 cup

Recipe Directions for The REAL Potato Kale Soup

  1. Prepare the veggies by cutting onions into thin slices, potatoes into cubes, mushrooms into slices, and garlic into a thick dice. Keep in separate piles.

  2. Heat 1 tbsp olive oil over medium heat.

  3. Add bacon and cook until crispy.

  4. Remove bacon to a paper towel.

  5. Add onions to pan and saute oil and bacon fat for about 10 minutes until soft and slightly browned.

  6. Add garlic and cook for 1 minute until fragrant.

  7. Add potatoes, kale, mushrooms, and salt, and stir to combine.

  8. Add chicken stock to the pot and bring to a boil.

  9. Once boiling, reduce to a simmer and cook for at least 30 minutes until the vegetables are soft.

  10. You may choose to smash a few of the potatoes against the side of the pot to thicken the consistency of the soup.

  11. Garnish each bowl with a healthy serving (1 tbsp included in count here) of Parmesan cheese.

  12. Any fresh herbs you have on hand can also be added. Suggestions include thyme and sage.
