I made this with out the bread bottom or the breadcrumbs. I am not sure about the amount of spinach. I just through in a couple big hand fulls. There are suppose to be more eggs, but I was running low.

Recipe Ingredients for Real Man Quiche

1 pound Turkey Italian Sausage
1 medium red onion
8 ounces sliced mushrooms
6 ounces baby spinach
3 eggs
2 egg whites
1/2 cup skim milk
1/4 teaspoon pepper
1 cup shredded Cheddar cheese

Recipe Directions for Real Man Quiche

  1. Preheat oven 350.

  2. Spray down a 9x9 inch pan with cooking spray

  3. Cook sausage in a skillet over medium high heat, breaking it up into small pieces with a wooden spoon, until cooked through, about 5 minutes. Transfer to a medium bowl lined with paper towels. Cook the onions and mushrooms, stirring, until beginning to brown, 4 to 5 minutes. Add spinach and stir until just wilted, about 1 minute. Transfer vegetables to the bowl with the sausage; set aside.

  4. Whisk eggs, egg whites, milk and pepper in a medium bowl.

  5. Spread the sausage mixture in an even layer in the pan. Pour in the egg mixture and top with cheese.

  6. Bake the quiche until the top is browned. 40 to 45 minutes. Let cool for 10 before cutting into wedges.
