a great way for vegetarians like me to get loads of protein in to their diet. who says we need meat?

Recipe Ingredients for Re-fried Protien Lunch

12 oz. Black Beans Canned
12 oz. Refried Beans, Canned
1 cup salsa
2 tablespoons cilantro
1 teaspoon cayenne pepper
2 1/2 cups corn

Recipe Directions for Re-fried Protien Lunch

  1. Add the black beans and re-fried beans to a large saucepan. Heat on medium high, for 5 minuets. Add salsa and cilantro. cook, stirring for 2 minuets. Add corn*. Stir for 3 minutes. Remove from heat. mix in Cayenne pepper and serve. You can eat this with or without tortillas, i prefer without.

  2. *I usually use frozen corn for this recipe, so if you are doing so, thaw the corn completely and drain exes water before adding it to the bean mixture.
