Recipe Ingredients for RD's Winter Vegetable Soup

4 1/2 pints water
4 vegetable stock cubes
4 leeks
3 carrots
3 cups parsnips
1 red pepper
3 potatoes
2 tomatoes (seeded)
1 tbsp olive oil
1 salt and pepper, (mixed herbs to taste)

Recipe Directions for RD's Winter Vegetable Soup

  1. Chop vegetables roughly.

  2. Heat oil in large heavy based pan and add leeks, carrots and parsnips. Fry for about 15 minutes on a medium heat.

  3. Add in water and stock cubes. Bring to the boil and remove any scum that surfaces.

  4. Reduce heat and add pepper, tomatoes and potatoes.

  5. Bring to boil again, turn down to simmer and add herbs if using.

  6. Cook on a low heat for approx 15-30 until potatoes and vegtables are fully cooked.
