"Tiramisu" means "pick me up!" in Italian. A five minute low fat dessert.

Recipe Ingredients for RD's Tiramisu

1 lb low-fat ricotta
1 egg
1 fl oz rum
1/2 tsp. vanilla extract
1 cup sugar
84 g (1/2 cup) espresso
12 amaretti biscuits (or savoyardi/ladyfinger biscuits)

Recipe Directions for RD's Tiramisu

  1. Combine first five ingredients in food processor and whiz until smooth (a minute or so).

  2. Arrange savoyardi in a single layer in the bottom of a 9x13 pan or casserole. Dribble half the coffee over them. Spoon half the cheese mixture over top, evenly.

  3. Repeat with second layer.

  4. Dust top with cocoa powder.
