Recipe Ingredients for RD's Sweet & Sour Pork Chops

1 tbsp vegetable oil
4 pork chops
4 tbsp orange marmalade
2 tbsp soy sauce
30 g mustard, (french or dijon)
1 red chili pepper
1 tsp ginger root
3 fl oz vegetable stock
1 tbsp cornflour
4 spring onions

Recipe Directions for RD's Sweet & Sour Pork Chops

  1. Heat vegetable oil in a frying pan and brown chops on both sides.

  2. Once the chops are browned add the vegetable stock and bring to the boil. Once boling reduce heat and simmer until chops are almost cooked.

  3. Mix together the marmalade, soy sauce, mustard, chilli and ginger. Add to the pan and stir in with the stock over a low heat until the marmalade has turned liquid.

  4. Remove chops from pan and keep warm.

  5. Mix 1tbsp water with the cornflour and add to the sauce stirring until thickened.

  6. Add chops back to pan and turn in sauce to ensure both side coated.

  7. Serve with steamed geenbeans and brown rice
