Recipe Ingredients for RD's Sweet & Sour Duck w/Brown Rice

2 cups brown rice, cooked
1/4 cup seasoned rice vinegar
2 tbsps soy sauce
2 tbsps cornstarch
2 tbsps apricot preserves (or orange/lime marmalade)
1 tbsps vegetable oil,
1 lb duck breast, (cooked and shredded)
4 cloves garlic, minced
2 tsps finely grated or minced ginger
1 cup chicken broth
1 cup bell peppers, sliced
1 cup broccoli florets
1 cup carrots, sliced
1 cup mushrooms, sliced
5 oz bamboo shoots
5 oz water chestnuts, sliced and drained

Recipe Directions for RD's Sweet & Sour Duck w/Brown Rice

  1. Whisk vinegar, soy sauce, cornstarch and apricot preserves in a small bowl. Set aside.

  2. Heat 1 tbsp oil in a wok over medium-high heat. Add the garlic and ginger to the pan and cook, stirring, until fragrant, 20 to 30 seconds. Add the broth and bring to a boil, stirring constantly. Add vegetables, reduce heat to a simmer, cover and cook until the vegetables are tender-crisp, 4 to 6 minutes. Stir in water chestnuts, bamboo shoots and the duck. Whisk the reserved sauce and add to the pan. Simmer, stirring constantly, until the sauce is thickened and the duck is heated through, about 1 minute. Serve with the rice.
