Recipe Ingredients for RD's Stuffed Butternut Squash

2 cups butternut squash, halved and seeded
2 tbsp olive oil
500 g ground beef
1 tbsp tomato paste
1 tsp ground cumin
100 g couscous
100 g feta cheese
100 ml water

Recipe Directions for RD's Stuffed Butternut Squash

  1. Heat grill to high and place squash on baking tray. Drizzle with 1tbsp oil and season. Grill for about 15 minutes then turn and grill again for a further 15 minutes. Scoop out the flesh and roughly chop.

  2. Heat the remaining oil in a pan and brown the mince. Mix in the paste, cumin and couscous and 100 ml water. Cover and remove from heat. leave for 10-15 minutes.

  3. Mix the squash with the couscous mixture and the cheese and stuff the squash skins. Grill for a few minutes.
