Recipe Ingredients for RD's Steak Diane with Brandy and Mustard Sauce


For the steak:
400 g sirloin steak (2 steaks about 200g each)
1/2 tsp black pepper, freshly ground
1 salt
1 tsp olive oil
1 tsp butter

For the sauce:
25 g brandy (2 tbsp)
2 tbsp butter
1 tsp soy sauce
2 tsp Dijon mustard
1/2 tsp salt, preferably sea or rock
1/2 tsp black pepper, freshly ground
1 tbsp chives, chopped
1 tbsp parsley, finely chopped
1 tsp lemon juice

Recipe Directions for RD's Steak Diane with Brandy and Mustard Sauce

  1. Place steaks in cling film and flatten using a rolling pin or meat mallet until about 5mm thick. Season with black pepper.

  2. Heat the oil and butter in a frying pan and cook the steaks briskly for 1 minute on each side. Remove the pan from the heat and place the steaks on a warmed dinner plate. Season with salt.

  3. Add the brandy to the frying pan and return it to the heat. Be careful as it may flame.

  4. Reduce the heat then add the butter, soy sauce, mustard, salt and pepper. Stir vigorously witha wooden spoon for about 1 minute allowing it to bubble and thicken.

  5. Add the herbs, lemon juice and any juices that have accumulated from the resting steaks. Stir well and pour the sauce over the steaks.

  6. Serve immediately with potatoes, asparagus, or a green salad
