Recipe Ingredients for RD's Steak with Caramelized Onions in a Red Wine and Cream Sauce

1 lb steak
2 tbsp double cream
3 tsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp shallot, chopped (1 large shallot or 2 small)
1 small onion, chopped
3 tbsp red wine
1 salt and black pepper

Recipe Directions for RD's Steak with Caramelized Onions in a Red Wine and Cream Sauce

  1. Place the steak on a non metal plate and rub with 1/2 tsp oil on each side. Rub the thyme and rosemary into the meat and marinate for at least 5 minutes or upto 1 hour.

  2. Heat 1 tsp oil in frying pan on a moderately low heat. Add the shallots, onion, salt and pepper and aute for about 8 minutes, stirring frequently to prevent browning. The mixture should be cooked slowly to caramelise. Remove the shallots and onion once done and put to one side.

  3. In the same pan add the remaining oil and saute the steak over a modrately high heat. for about 5 minutes on each side. Remove the meat and set aside.

  4. Remove any excess oil from the pan and return to a high heat. Add the wine and simmer for about 20 seconfs. Add the cream and caramelised mixture and simmer for about about 3 minutes.

  5. Thinly slice the steak and spoon the sauce over the top.
