Recipe Ingredients for RD's Spicy Bacon and Lentil Soup

1 cup red lentils
1 medium onion, chopped
2 cloves garlic, finely chopped
1 red pepper, diced
3 carrots,diced
400 g chopped tomatoes
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp coriander
3 cups vegetable stock, 1.5 pints
1/2 tbsp olive oil
100 g bacon, trimmed of fat

Recipe Directions for RD's Spicy Bacon and Lentil Soup

  1. Heat the olive oil in a large apn and cook the vegetables until soft in thened.

  2. Add the spices and stir well, ensuring the vegetables are well coated.

  3. Add the lentils, tomatoes and bacon to the pan. Heat through and add the vegetable stock. Simmer for 10-15 minutes then serve.
