Recipe Ingredients for RD's Rice, Tomato and Cumin Soup

1 medium onion, finely chopped
4 garlic cloves, crushed
2 oz butter
2 tsp ground cumin
6 oz brown rice (basmati)
1600 g chopped tomatoes
550 ml low sodium chicken broth
1 tbsp parsley, chopped
1 salt and black pepper
1/2 tbsp olive oil

Recipe Directions for RD's Rice, Tomato and Cumin Soup

  1. Sauté the onion and garlic in the butter, stirring occasionally, until the onion is soft and translucent. Add the cumin, rice, tomatoes and stock and cook for about 10 minutes until the rice is cooked.

  2. Add the parsley and season.

  3. Ladle into warm bowls, drizzle with olive oil and serve.
