Recipe Ingredients for RD's Potato-Leek Soup

1 lb potatoes, peeled
3 leeks
1 oz butter
1 small onion
1 1/2 litres chicken stock
1/2 tsp salt
1/2 tsp black pepper

Recipe Directions for RD's Potato-Leek Soup

  1. Trim and wash leeks and then chop with the potatoes and onion.

  2. Melt the butter in a large saucepan. Add the leeks and onion. Cook gently for about 10 minutes or until soft but not browned.

  3. Add the potatoes and 1.25l of the stock, reserving the remaining 250ml. Season with half the salt and a little black pepper. Bring to the boil, then simmer gently for 15 minutes, or until the potatoes are tender.

  4. Pureethe soup with a potato masher or blender until just smooth. Add the remaining stock. Season to taste with remaining salt and pepper. Reheat gently.
