Recipe Ingredients for RD's Penne Chicken Vodka Marinara

1 tbsp olive oil
1 tbsp butter
1 lb chicken breast, cooked and shredded
2 cloves garlic, minced
2 tbsp shallots, minced (2 shallots)
1 cup vodka
1 cup chicken stock
800 g canned tomatoes, chopped
1 Salt and pepper
12 oz pasta, (penne rigate)
1/2 cup double cream
10 g fresh basil, shredded or torn (about 20 leaves)

Recipe Directions for RD's Penne Chicken Vodka Marinara

  1. Heat a large frying pan over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness.

  2. Add vodka to the pan. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes and shredded chicken. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper

  3. While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it).

  4. Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves.

  5. Serve with crusty bread.
