Recipe Ingredients for RD's Lamb Meatball & Squash Soup

400 g ground lamb
2 tbsp lemon zest
2 peppers, chili, red, diced very finely
1 tsp black pepper (to taste)
2 tbsp chives, chopped finely
650 g squash, diced roughly
200 g potato, diced roughly
2 red peppers, chiopped into chunks
400 g red onions, sliced
2 garlic cloves, minced
1 tbsp olive oil
1 tsp ground cumin (and 1 tsp ground tumeric)
3 cups beef stock
1 l water

Recipe Directions for RD's Lamb Meatball & Squash Soup

  1. To make the meatballs (makes appox 32):

  2. Mix the minced lamb with lemon zest, chili, chives and black pepper. Roll into little balls (about 1 tsp per ball) and place in refridgerator for at least an hour. Can be refridgerated overnight).

  3. To make the soup:

  4. Gently fry the onion, garlic in the olive oil for a few minutes until softened. Add the tumeric and cumin and fry for another couple of minutes until well mixed. Add the squash, potato, peppers, stock and water and bring to the boil. Reduce heat and simmer without a lid on until potatoes and squash nearly cooked. Bring back to the boil and add in the meatballs.l Boil for about 5 minutes until the meatballs are cooked through. Serve in large bowls with the cheese damper.
