Recipe Ingredients for RD's Hungarian Goulash

2 tbsps olive oil
1 lb stewing steak, cubed
2 medium onions
25 g (1 tbsp) flour, wholemeal
1 tbsp paprika (or more)
1 pinch cayenne pepper
1 pinch caraway seeds
400 g tomatoes
275 ml hot water
1 tsp tomato paste
225 g squash
225 g carrots
500 g potatoes
1 green pepper, diced
150 g (ml) greek yoghurt
1 Salt and Pepper

Recipe Directions for RD's Hungarian Goulash

  1. Preheat the oven to 180C/ 350F/ Gas Mark 4.

  2. Heat the oil in a large, heavy-bottomed pan with a lid over a medium-low heat. Add the onions, peppers, garlic and salt and fry, stirring occasionally for 10?15 minutes until the onions are translucent. Now add the beef cubes and cook for another 2?3 minutes.

  3. Prepare the vegetables by cutting them into chunks. Stir in the flour and most of the paprika and cayenne pepper. Cook for a minute and add the tomatoes, paste and water. Bring the ingredients to a boil, stirring constantly. Add the vegetables, salt and pepper. Transfer to a casserole dish and bake covered for 30-40 minutes. After this time stir in the yoghurt, sprinkle on the rest of the paprika.
