Rd's French Onion Soup Recipe

Recipe Ingredients for RD's French Onion Soup

50 g butter
1 tbsp olive oil
2 kg onions, sliced
2 tsp dried thyme
1 tsp caster sugar
1 tbsp white wine vinegar
1 1/2 l beef stock
1 1/2 tbsp plain flour
150 ml white wine
25 g brandy (3tsp)
1 salt and pepper, to taste

Recipe Directions for RD's French Onion Soup

  1. Melt the butter and oil in a large heavy based pan. Add onions and fry on a medium heat for about 5-8 minutes until starting to soften.

  2. Add thyme and reduce the heat to very low. Cover the pan and continue to cook for a further 20-30 minutes, stirring frequently until the onions are soft and yellow.

  3. Increase the heat slightly and the sugar. Cook for 5-10 minutes until the onions start to brown.

  4. Add the vinegar and increase the heat again, stirring often until the onions turn a deep golden brown. (This can take upto 20 minutes.)

  5. In a separate pan bring the beef stock to the boil.

  6. Stir the flour in with the onions and cook for 2-3 minutes.

  7. Gradually add the hot stock and bring back to the boil.

  8. Add the wine and brandy and season to taste.

  9. Reduce heat and simmer for 10-15 minutes. Serve.

  10. TIP: The long slow cooking of the onions is the key to success. If the onions are browned too quickly they will be bitter.
