Recipe Ingredients for RD's Emerald Salad

140 g mixed salad leaves, (1 bag of mixed greenleaves)
1 green pepper, sliced
1/4 cucumber, sliced
1 avocado, peeled, stoned and sliced
2 kiwi fruit, peeled and sliced
1 salt and black pepper
6 tbsp fat free Italian vinaigrette dressing

Recipe Directions for RD's Emerald Salad

  1. Empty the lettuce leaves into a large bowl.

  2. Toss in the green pepper, cuccumber slices, avocado and kiwi fruit.

  3. Season well and toss in the dressing
