Recipe Ingredients for RD's Corsican Grilled Peppers

2 red peppers
2 yellow peppers
2 cloves garlic, crushed
1 medium onion, chopped
1 tbsp olive oil
1 lb mushrooms, sliced
2 oz pine nuts, toasted (optional)
8 tbsp fat free Italian dressing

Recipe Directions for RD's Corsican Grilled Peppers

  1. Cut peppers in half and remove seeds. Grill for 7-8 minutes on each side.

  2. Saute garlic and onion in oil until soft. Add mushrooms, season well and cook for about 5 minutes, stirring occasionally.

  3. Spoon the mixture into the pepper halves and scatter over with the pine nuts.

  4. Drizzle with the dressing
