Recipe Ingredients for RD's Chickpea Salad

250 g chickpeas, canned and drained
1 tbsp fresh coriander, finely chopped
1 tbsp fresh parsley, finely chopped
2 medium tomatoes
1 red pepper, thinly sliced
1 tbsp fresh mint, finely chopped
1 tbsp extra virgin olive oil
1 tbsp lemon juice
1 pinch sugar
1 pinch mustard powder

Recipe Directions for RD's Chickpea Salad

  1. Put the chickpeas in a serving bowl. Half the tomatoes scoop out the pips and chop the flesh and add to the chickpeas together with the red pepper and fresh herbs.

  2. Combine the olive oil with the remaining ingredients and pour over the chickpea salad.

  3. Toss and serve.
