Recipe Ingredients for RD's Chicken and Pepper Salad

300 g chicken breasts (3 fillets)
2 tbsp olive oil
1 red pepper, sliced
1 yellow pepper, sliced
4 spring onions, sliced
140 g mixed leaves (1 bag)
2 oz cashew nuts
1 salt and black pepper
6 tbsp fat free Italian vinaigrette dressing

Recipe Directions for RD's Chicken and Pepper Salad

  1. Slice the chicken breasts and lightly fry in the oi until the chicken is golden. Remove from pan and set aside to cool.

  2. Add the peppers and spring onions to the pan and again lightly fry until just softened. Allow to cool.

  3. Arrange the mixed leaves in individual serving bowls and scatter the chicken, peppers, sping onions and cashew nuts over.

  4. Season well and drizzle the dressing on top
