A vegetarian version can be made by omitting the chicken and kabanos. Can also be served cold as a rice salad

Recipe Ingredients for RD's Chicken and Kabanos Rice

1 tbsp olive oil
1 lb chicken breast (cooked and shredded)
200 g polish sausage, chopped (Kabanos)
1 onion, peeled and finely chopped
2 cloves garlic, crushed
1 dried chile pepper (or 1 tsp dried chilli flakes)
1 green pepper, seeded and finely diced
8 oz basmati rice
3 vegetable stock cubes (plus 450ml boiling water to make up)
400 g chopped tomatoes (or 300ml passata sauce)
2 tbsp fresh dill or parsley or chives, chopped

Recipe Directions for RD's Chicken and Kabanos Rice

  1. Heat the oil in a large saucepan. Add the onion, garlic, chilli flakes and green pepper. Cook for about 5 minutes until softened.

  2. Stir the rice into the onion mixture, ensuring all the rice is coated. Add the stock and passata (or chopped tomatoes). Add the chicken and kabanos. Bring to the boil, stirring once or twice, then cover tightly.

  3. Reduce heat and simmer gently for about 20 minutes, stirring occasionally, until the rice is tender and the liquid has been absorbed.

  4. Remove from the heat and allow to stand for 5 minutes. Use a fork and gently mix in the herbs. Serve immediately.
