Recipe Ingredients for RD's Chicken and Black Rice

440 g chicken breast, diced
1 orange (juice)
1 red pepper, chili
1 clove garlic, minced
2 tbsp soy sauce
125 g brown rice
1 1/2 tbsp vegetable oil
75 g button mushrooms, sliced
6 spring onions, sliced
100 g bean sprouts

Recipe Directions for RD's Chicken and Black Rice

  1. Cook the black rice according to packet instructions. (Usually takes about 25-30 minutes in a pan of boiling water)

  2. Heat the vegetable oil in a wok or a large frying pan to a high heat.

  3. Add the diced chicken and stir until thoroughly cooked. Remove chicken and keep warm.

  4. Add the garlic to the wok and fry for 1-2 minutes then add the mushrooms and half the spring onions and fry for another 1-2 minutes.

  5. Add the bean sprouts, soy sauce, orange juice and chicken and fry for another 3-4 minutes.

  6. To serve place the rice on warmed plates and put the chicken on top. Sprinkle the remaining spring onions over the top.
