Recipe Ingredients for RD's Beef and Red Wine Casserole with Bubble and Squeak


For the casserole:
2 lb steak, diced
1 fl oz red wine vinegar
1 pint red wine, Rhone or Rioja
5 fl oz water
2 tbsp olive oil
12 oz mushrooms
1 tbsp flour
6 black peppercorns (and 1 bouquet garni)
12 oz tomatoes, Roma (skinned, quartered and seeded)
8 garlic cloves
1 salt

For the bubble and squeak:
500 g potato, diced
2 cups savoy cabbage (1/4)
1 tbsp butter
1 onion
1 salt and pepper

Recipe Directions for RD's Beef and Red Wine Casserole with Bubble and Squeak

  1. For the casserole: Preheat the oven to 275F (140C) Gas 1.

  2. In a saucepan, boil the vinegar to reduce it completely, then add the red wine. Reduce to half, add the water and reserve.

  3. Separately, heat the oil in the casserole and colour the diced beef over a strong heat for 8-10 minutes.

  4. Add the button mushrooms, onions or shallots and cook for a further 2-3 minutes.

  5. Sprinkle over the flour, stir and cook for a further minute.

  6. Add the reduced wine, the bouquet garni, crushed peppercorns (or pepper), tomatoes and garlic.

  7. Cover and cook in the preheated oven for 2 1/2 hours.

  8. Variations: Add 15 caraway or coriander seeds for a different flavour.

  9. For the bubble and squeak: Boil and mash the potatoes. Allow to cool.

  10. Boil the cabbage and onion in salted water for 20 minutes, then drain and cool.

  11. Work the butter into the potato, making sure it stays fairly dry in texture.

  12. Mix in the cabbage and onion and season well.

  13. Form the bubble into cakes and fry in oil for ten minutes on each side. The outside should be golden and the cakes should stay firm.
