Recipe Ingredients for RD's Authentic Chicken Curry

450 g chicken
4 tbsp oil
1 large onion
2 cloves garlic
1 tsp ginger root
3/4 tsp dried coriander
1/4 tsp turmeric
1/4 tsp curry powder or garam masala
1 tsp paprika
2 large tomatoes
1 pepper
100 g mushrooms
500 ml water

Recipe Directions for RD's Authentic Chicken Curry

  1. Heat oil in heavy based pan. add onion and saute on a medium heat for 20-25 minutes til deep brown.

  2. Add coriander powder and fry for a further minute. Then add the remaining spices and saute for 30 seconds.

  3. Add 200ml water and cook for 10 minutes. Add the chopped tomatoes, stir and cook for another 5 minutes.

  4. Add the chopped chicken and a further 300ml water. Cook for about another 25 to 30 minutes until done.
