Recipe Ingredients for RD's Apple and Sage Chicken

1/2 lb diced chicken
2 onion, peeled and sliced
1 apple, (eating) cored and cut into wedges
2 1/2 fl oz double cream
2 1/2 fl oz cider
2 1/2 fl oz chicken stock
1 tsp fresh sage (3 sprigs)
1 tsp parsley, freshly chopped
1/2 tbsp olive oil
1 salt and pepper
150 g pasta (tagliatelle)

Recipe Directions for RD's Apple and Sage Chicken

  1. Heat the oil and add the chicken. Cook quickly until golden brown and put on a plate.

  2. Add the onions and fry for 3-4 minutes until starting to soften. Add the sage, apples, cider and stock. Season well, add the chicken, bring to the boil, cover and simmer gently until the chicken is completely cooked, about 5-15 minutes.

  3. Meanwhile cook the pasta in a large pan of boiling water until al dente.

  4. Stir in the cream and heat through.

  5. Stir in the parsley and serve.
