Recipe Ingredients for Rayne's Special Palak Kofta

6 ounces canned spinach
1 cup gram flour
2 tablespoons cashew butter
1/2 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1 tablespoon poppy seeds
1/2 teaspoon kosher salt
2 tablespoons vegetable oil
1 1/2 small potatoes (diced)
14 1/2 oz mexican style diced tomatoes
2 teaspoons ginger paste
1 tablespoon red chili paste
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon curry powder
1 tablespoon garlic powder
1 green bell pepper (diced)
2 tablespoons olive oil
1 teaspoon turmeric
1/4 cup yoghurt
1 cup basmati rice

Recipe Directions for Rayne's Special Palak Kofta

  1. Make the koftas as follows:

  2. Open can of spinach and drain as much water as possible.

  3. Grind poppy seeds, cashew nut butter, spinach, first amount of coriander, first amount of cumin, first amount of cayenne pepper, and gram flour (besan) in the food processor to make a paste.

  4. Form into balls and flatten into patties about a 1/4 inch thick.

  5. Heat enough vegetable oil for frying and fry the patties until very thoroughly cooked.

  6. For the sauce:

  7. Heat olive oil.

  8. Add all remaining spices, red chili paste, and ginger paste.

  9. Add tomatoes and cook for about 5 minutes.

  10. Add potatoes and bell pepper and about 1/4 cup water.

  11. Simmer and cover until potatoes are soft.

  12. Add the koftas until they're warm.

  13. Serve with basmati rice.
