Zucchini Hummus is a little thinner than the traditional garbanzo bean version, but it tastes just as delicious. Serve as a dip with veggies or in a RAW sandwich.

Recipe Ingredients for RAW Zucchini Hummus

1 1/2 cups zucchini, peeled and chopped
2 tablespoons tahini, raw
2 tablespoons lemon juice, fresh
1/2 teaspoon garlic, crushed (1 clove)
1/4 teaspoon cumin, ground
1/4 teaspoon paprika
1/4 teaspoon salt

Recipe Directions for RAW Zucchini Hummus

  1. Place all ingredients in a food processor fitted with the S blade and process until smooth.

  2. Stop occasionally to scrape down the sides of the bowl with a rubber spatula.

  3. Stored in a sealed container in the refrigerator, RAW Zucchini Hummus will keep for 5 days.
