Try this delicious "pasta" made from strips of summer squash and zucchini tossed with tomatoes and fresh basil and oregano for a dish packed with bright flavors

Recipe Ingredients for Raw Vegetable Pasta

260 grams Squash, Summer, Zucchini, Includes Skin
80 grams Organic Cherry Tomatoes
15 grams Shallots
1 clove Garlic
1/2 tbsp Basil, Fresh
1/4 tablespoon Oregano
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Raw Vegetable Pasta

  1. Shave 130g zucchini squash and 130g summer squash thinly and lenghtwise with a vegetables peeler. Cut the tomatoes in half, and finely chop shallots, garlic, and fresh basil and oregano.

  2. In a large bowl, gently toss together all ingredients. Transfer to a platter and serve immediately.

  3. TIP: If you prefer the squash to seem more spaghetti-like in texture, stir-fry them in a saute pan before mixing it with the rest of the ingredients..
