Vegan Sushi with Cauliflower/Broccoli "rice"

Recipe Ingredients for Raw Vegan Sushi

1 c. Cauliflower
1 c. Broccoli
1 tbsp. Rice Vinegar
1 tbsp. Maple Syrup
1/4 tsp. Sea Salt
1/4 c. Carrots
1/2 Avocado

Recipe Directions for Raw Vegan Sushi

In food processor, puree cauliflower, 1 C. Broccoli, rice vinegar, maple syrup (or agave nectar), and sea salt. Spread on 2 Nori seaweed, covering approximately 3/4 of sheet. Add sliced carrots, avocado, and broccoli. Roll into sushi roll, slice, and enjoy.
