Recipe Ingredients for Raw Vegan Pumpkin Pie


Crust:
2 cups raw almonds
1 cup pitted dates

Filling:
1/3 cups raw cashews
6 cups butternut squash (or pumpkin), cubed
1/2 cups raw agave syrup
2 tsp vanilla
2 tbsp pumpkin pie spice
1 tsp cinnamon
1 tbsp psyllium husk
1/4 tsp sea salt
1/2 cups water

Recipe Directions for Raw Vegan Pumpkin Pie

  1. Crust: Grind nuts in food processor until fine, add dates and process until similar to graham cracker crust texture. Press into 2 glass pie plates.

  2. Filling: Process pumpkin or squash in food processor until fairly smooth. Transfer to blender and add agave, vanilla and spices and blend until smooth, adding water as needed. Process nuts and a little water in food processor until creamy, add to blender mixture and blend. Add psyllium husk last and blend until just combined, pour into pie plates. Chill at least 1 hour and then serve.
